4. Microgreens
Known as sprouts, microgreens are the initial shoots from numerous vegetables or herbs like arugula, broccoli and chard. Studies show that they are loaded with carotenoids, vitamins and beta-carotene. It’s ideal to consume microgreens close to harvest time to benefit from the nutrients or you could also cultivate them at home using organic soil. They are ready to be harvested once are about two inches tall in height.
