5. Red and Green Leaf Lettuce
Leaf lettuces are packed with folate and vitamin A and K. Keep in mind that the darker the lettuce, the more nutrient dense, hence red leaf varieties are a bit more nutrient-rich. Due to its soft texture and gentle taste, leaf lettuce is a common addition to dishes across a wide range of cuisines. Simply chop up your lettuce and pre-prepare containers of salad. Drizzle some lemon juice and olive oil for added flavor.
